The interesting origin of Macaroni

The history of Macaroni is a complex but one interesting tale every pasta lover will be amused to know. Before we begin to unleash the history of Macaroni, let’s talk about the basics of macaroni and why it is an important pasta dish. Who invented Macaroni?

The invention of macaroni is attributed to Etruscans a civilization which was the pre-roman civilization of Italian peninsula. As far as Marco Polo is concerned, it is believed that he bought dried pasta to China. In reality, he didn’t. Although he encountered wheat in China and we can say that he brought back another food from another country. It is clear that he didn’t discover macaroni in the Far East for two reasons. First, it is clear that he was already familiar with lasagna and vermicelli and other pasta from his descriptions of various pastas he encountered in the east. Second, when he described the dough that people used to think to be macaroni, he used the word Lasagne, Lagana and Vermicelli. Here it is important to note that Lagana was not the word used by Chinese or Sumatrans but was a word he was already familiar with. In fact, he was already familiar with pasta secca in Italy before he set out on his journey.

The invention of this famous pasta is often associated with the Etruscans, the Chinese, the Greeks, the Romans and the Arabs. Some of the learned macaroni manufacturers in India stated that the origin of macaroni lies not just with the Etruscans, Romans, Greeks or Chinese but with the Arabs. The earliest evidence of macaroni occurs at the juncture of Italian, medieval Sicilian and the Arab culture.

The word macaroni has an unknown origin. This word first appeared in the mid-eleventh century in Naples where it used to mean something crude. Later around the twelfth or thirteenth century, it came to mean pasta secca. The Italian dictionaries admit the word macaroni’s obscure origin. Another suggestion is that the word macaroni is derived from maccare that is an archaic verb that means “to knead”. The assumptions are endless but the mystery of macaroni’s origin is still unsolved.
