A crispy experiment with whole wheat penne pasta

Ingredients required:

The list of ingredients that you would need to include are 250 grams of cherry tomatoes (halved), 100 grams of sliced red onion, 1 teaspoon extra-virgin olive oil, 1/2 teaspoon crushed red-pepper flakes, one garlic clove, minced, 1/4th cup of part-skim ricotta cheese, 1 tablespoon chopped fresh oregano and a packet of whole wheat penne from wheat pasta manufacturer Gustora.

The recipe

  1. Preheat the nonstick pan. Toss the onions and tomatoes with 2 teaspoons of oil, red pepper flakes and 1/2 teaspoon salt. Cook for 5 to 7 minutes and wait until the tomatoes cook.

2. At the same time, bring a large pot of water to boil. Cook pasta according to the directions on the packet. Drain the pasta and reserve 1/2 cup of the cooking water.

3. Now, toss warm pasta with garlic, add 2 teaspoons oil and 3/4 teaspoon salt. Stir the tomato mixture and oregano. Add 1/4 cup reserved cooking water to moisten: stir in remaining water as needed. Serve your pasta in bowls and add one tablespoon of ricotta cheese into each.
